Montclair Entrepreneur Nicole Bailey Builds Regional Franchise From Single Storefront
Nicole Bailey turned a single Montclair bakery into an 18-location regional franchise, expanding across northern New Jersey while keeping production centralized in her original location.

Nicole Bailey opened her 18th bakery franchise location this month, expanding a business that began as a single storefront in downtown Montclair into a regional chain spanning northern New Jersey, with plans to cross into New York's Rockland County for the first time next year.
Bailey started Millbrook Bakehouse eleven years ago after leaving a corporate marketing career, initially selling bread and pastries out of a small leased space with a handful of employees. Rather than franchising immediately upon early success, Bailey spent several years centralizing production at her original Montclair facility, a decision she says preserved product consistency as the company scaled.
"I watched other local bakeries franchise too fast and lose the thing that made them special in the first place," Bailey said. "We kept baking centralized here in Montclair for years longer than most franchise consultants would have recommended, because I wasn't willing to trade quality for speed."
Millbrook Bakehouse now operates a central production facility that supplies baked goods to all 18 retail locations, allowing individual storefronts to operate with smaller kitchen footprints and lower staffing requirements than a fully independent bakery model. Bailey says this structure has kept franchisee costs lower than competing regional bakery franchises.
The company's planned expansion into Rockland County will mark its first location outside New Jersey, a milestone Bailey says she approached cautiously after watching several regional competitors stumble during out-of-state expansion.
